MIKE'S MONKEY BREAD

Topping:
1 1/3 cup brown sugar
4 teaspoons cinnamon
1 cup pecans (optional)


Dough:
2 cup lukewarm water
1/2 cup sugar
1 package (1 Tablespoon) dry yeast
2 eggs
7 cups flour (divided)
4 Tablespoon vegetable oil
1 Tablespoon salt
1 cube of butter or margarine
3 Tablespoon cinnamon

Put lukewarm water and sugar in a mixing bowl. Add dry yeast and mix thoroughly. Beat eggs and add to mixture; then sift in 3 cups of flour; beat well. Add vegetable oil; stir in salt, cinnamon and 4 cups of flour. Keep stirring until all flour is mixed in. Put damp cloth over dough and let rise one hour or until double in bulk. Stir down and put in refrigerator. When ready to use, melt 1/2 cube of butter or margarine in each of 2 bunt pans. Sprinkle half of topping mixture in the bottom of each of the bunt pans. Set other half of topping mixture to the side. Roll out dough in topping mixture then put a layer of rolls standing upright like a wheel in the bunt pan. (divide dough in half, about 22 rolls in each pan). Sprinkle remaining topping mixture on the top. Let rise for 3 hours and bake at 400 degrees for about 20 minutes. Loosen around edges and turn out on a plate.
